Stir Fry Scallops In Plum Sauce

Large sea scallops stir-fried with jalapeno chilis, ginger, white wine, plum sauce, butter, soy sauce, cilantro, garlic, egg, and cornstarch. Perfect served with long grain white rice.
Ingredients -
 

16 Large Sea Scallops
2 Jalapeno Chili Peppers, stemmed and seeded
1/8 cup Crystallized Ginger
1/8 cup White Wine
1/8 cup Plum Sauce
1/8 pound Butter, unsalted
1 ounce Soy Sauce
1/2 cup minced Fresh Cilantro
1 clove Garlic, minced
1 Large Egg
1/8 cup Cornstarch

 
Preparation:
 

1. Heat walk over medium heat. Add 1-cup water to bottom.

2. Poach scallops 2 minutes.

3. Remove scallops from wok. Discard water.

4. Add peanut oil to hot wok.

5. Add scallops, jalapeno chili peppers, ginger, and garlic. Stir-fry 30 seconds.

6. Add white wine, plum sauce and soy sauce. Stir fry- 2 minutes.

7. Remove from heat. Add butter and cilantro.

8. Serve hot.
