Stir Fried Scallops and Sweet Peppers

Bell pepper, onion, and scallops are stir-fried in hot oil with soy sauce and sesame oil. Stir-fry is served over cooked rice.

Ingredients -

1 tablespoon Oil
1 cup thinly sliced Sweet Red or Yellow Pepper
1 cup thinly sliced Green Pepper
1 cup thinly sliced White Onion
1 pound Sea Scallops
1 teaspoon Sesame Oil
1 tablespoon Low-Sodium Soy Sauce

 
Preparation:

1. Add the oil to a medium saucepan and heat for 1 minute.

2. Add the peppers and onions.

3. Stir fry until fork tender which takes about 5 minutes.

4. Remove the vegetables and set to the side, keeping them warm.

5. Add the scallops to the pan and stir fry for 3 minutes.

6. Return the vegetables to the pan with the scallops and toss to combine.

7. Add the soy sauce and sesame oil.

8. Stir well to coat, cover and cook for 1 to 2 minutes.

9. Serve with white or brown rice.
