Seafood Scampi With Vegetables

Angel hair pasta topped with sauteed shrimp, scallops, green onions, carrots, bell pepper, asparagus tips, mushrooms, and seasoned with garlic and Italian herb seasoning.
Ingredients -
 
Angel Hair Pasta
1 stick Butter
1 tablespoon Olive Oil
1 1/2 cups Medium Shrimp, shelled and deveined
1 1/2 cups Large Sea Scallops, quartered
1/2 cup chopped Green Onions
1/4 cup thinly sliced Carrots
1 cup (combined) thinly sliced Red, Green, Yellow & Orange Bell Peppers
1/2 cup Asparagus Tips
1/4 cup sliced Mushrooms
2 cloves minced Garlic
1 teaspoon Italian Herb Seasoning
 
Preparation:
 

1. Boil water for pasta, and prepare pasta as directed.

2. In a large skillet, heat butter and olive oil over medium heat.

3. Add shrimp, scallops, green onions, carrots, bell peppers, asparagus, and mushrooms.

4. Cook only long enough to cook seafood through, stirring occasionally.

5. Strain pasta and put in a large serving bowl.

6. Mix in seafood mixture, including butter sauce. Toss to mix.

Cooking Tip

Medium Shrimp
Medium shrimp are found fresh in the seafood department and in frozen foods. Look for a count of 35-40 shrimp per pound.

Italian Herb Seasoning
Combine 1 teaspoon each - Oregano, Marjoram, Thyme, Basil, Rosemary, and Sage. Makes 2 tablespoons Italian herb seasoning.
