Scallops On Pancetta With Gorgonzola Cheese

Simple recipe for scallops and gorgonzola cheese wrapped in pancetta ham and baked long enough for the cheese to melt, the scallop to cook through and the ham to begin to brown. This makes a great hot appetizer.
Ingredients -
 
1 pound thinly sliced Pancetta Ham
8 ounces Gorgonzola Cheese
1 pound Fresh or Frozen Sea Scallops
 
Preparation:
 

1. Preheat oven to 450 F.

2. Place individual slices of ham in baking dish. Place one scallop in center of each slice of ham.

3. Top with ½ teaspoon cheese.

4. Wrap the pancetta around the scallop, enclosing the scallop and the cheese.

5. Bake 10-12 minutes.

Cooking Tip

Gorgonzola Cheese
Gorgonzola is a fine italian blue cheese. If you cant find it, or want to try something different, we would suggest another blue cheese like roquefort, or perhaps an herbed goat cheese.
