Scallop Casserole

Scallops topped with mixture of butter, bread crumbs, milk, Ritz cracker, salt and fresh ground pepper. Casserole is baked in preheated oven until crust is golden brown and scallops are cooked through.

Ingredients -
1 pound Scallops
1/2 cup Butter
1/2 cup Soft Bread Crumbs
2/3 cup Milk or Cream
1 cup Ritz Cracker Crumbs
Coarse Salt
Fresh Ground Black Pepper
 
Preparation:

1. Preheat the oven to 325 degrees.

2. Place the butter in a bowl.

3. Melt it in the microwave, remove and add the bread crumbs.

4. Butter a baking dish and add a layer of scallops.

5. Cover in 1/2 of the butter/crumb mixture.

6. Pour the milk over the top and season lightly with salt and pepper.

7. Repeat the layers.

8. The final layer evenly spread the Ritz cracker crumbs.

9. Bake for 25 minutes and serve immediately.

Selecting Scallops
Purchase scallops from a reputable fish monger. Fresh scallops perish quickly and usually are shelled washed and flash frozen to preserve. The flesh of all scallops should be white and firm and the smell should be slightly sweet and never have an “off” odor.
