Grilled Bacon Wrapped Scallops

Scallops wrapped in bacon, grilled on kabobs with onion, tomato, and pineapple. Kabobs are seasoned with salt and fresh ground black pepper, and brushed with a Worcestershire lemon juice, and butter sauce.
Ingredients -
 
1 pound medium Scallops
6 slices cooked, but not crisp Bacon
1 Sweet Onion, peeled and chunked
12 Cherry Tomatoes
1 Pineapple, peeled, cored, chunked or 1 large can Pineapple Chunks
3 tablespoons melted Butter
1 teaspoon Worcestershire Sauce
1 tablespoons Fresh Lemon Juice
Salt, to taste
Fresh Ground Black Pepper, to taste
12 long Bamboo Skewers, soaked in water
 
Preparation:
 

1. Preheat grill.

2. Cut bacon to desired lengths, and wrap around scallops.

3. Make kabobs with onion, scallops, tomato and pineapple.

4. Combine Worcestershire, lemon juice and butter. Season with salt and pepper.

5. Brush kabobs with sauce.

6. Grill 5 minutes, basting occasionally, and rotating kabobs during grilling.

Fresh Scallops
While fresh is the scallop of choice, frozen sea and bay scallops should be available year round at your local supermarket. Scallops should be always be thawed and any excess water allowed to drain off.

Use hickory smoked bacon or prosciutto as a nice alternative to regular bacon.
