Broiled Bay Scallops

Bay scallops seasoned with paprika, fresh ground pepper and fresh lemon juice are broiled until they turn opaque but not over cooked. Scallops are garnished with chopped fresh parsley.

Ingredients -
1 pound Bay Scallops, rinsed, pat dry, halved
1 teaspoon Paprika
Fresh Ground Black Pepper, to taste
Juice of 1 Fresh Lemon
2 tablespoons chopped Fresh Parsley
 
Preparation:

1. Preheat the broiler.

2. Spray a baking dish with olive oil cooking spray.

3. Place the scallops in the prepared baking dish.

4. Season both sides with pepper to taste and paprika.

5. Sprinkle lemon juice evenly over one side.

6. Broil the scallops for 3 minutes 3 inches away from the heat turning once.

7. The scallops are done when they turn opaque.

8. Garnish with chopped parsley.

Cooking Scallops Perfectly

The trick is to cook scallops just through, so they are still moist inside. Over cooking can cause scallops to become rubbery.
