Breaded Sea Scallops

Simple but delicious breaded sea scallops recipe starts with sea scallops dipped in egg and rolled in a breadcrumb, instant potato flake, salt and pepper breading mixture. Scallops are sauteed in butter to a delicate crisp.
Ingredients -
 
2 Extra Large Egg, beaten
1/2 cup Mashed Potato Flakes
1/2 cup Seasoned Breadcrumbs
1/3 teaspoon Salt
1/4 teaspoon Fresh Ground Black Pepper
1 pound Sea Scallops
3 tablespoons Butter
1 tablespoon Vegetable or Olive Oil
 
Preparation:
 

1. In a shallow bowl, combine breadcrumbs, mashed potato flakes, salt and fresh ground black pepper.

2. Dip scallops in eggs.

3. Roll scallops in breadcrumb mixture.

4. Heat butter in a non-stick saute pan over medium heat.

5. Cook scallops 3 minutes, turn over and cook 2 minutes, or until breadcrumbs are golden brown and scallops are opaque.

Seasoned Breadcrumbs
Add bread slices and 1/4 cup Parmesan cheese, 2 tablespoons dried parsley, 1 teaspoon dried oregano, 1 teaspoon dried basil, 1 teaspoon garlic powder, 1 teaspoon onion powder, to food processor, and pulse to breadcrumb size.

Cooking Tip

Mashed Potato Flakes
If you need a susbstitute for potato falkes, use cracker crumbs, crushed potato chips. or grated potato that has had a chance to dry out.
