1. In a shallow bowl, combine breadcrumbs, mashed potato flakes, salt and fresh ground black pepper.
2. Dip scallops in eggs.
3. Roll scallops in breadcrumb mixture.
4. Heat butter in a non-stick saute pan over medium heat.
5. Cook scallops 3 minutes, turn over and cook 2 minutes, or until breadcrumbs are golden brown and scallops are opaque. |
